You buy a variable temperature kettle for its electronics. You keep it for its spout.
The Stagg EKG Pro's gooseneck spout is narrow and elongated, and this geometry has a direct consequence: the flow is slow by default. Where a wide spout pours a volume that you simply endure, this one forces you to decide: pouring height, spiral diameter, pace of passes. Each of these actions modifies the agitation of the coffee bed, and therefore the speed at which water passes through the coffee, and thus the extraction.
In concrete terms: a high, thin pour digs into the grind and speeds up the pass. A low, wide pour gently saturates and extends contact time. With the same coffee, the same dose, and the same water, these two actions do not yield the same cup. The spout doesn't compensate for anything for you; it simply makes the action legible.
The rest of the kettle is there to ensure this action is reproducible. The temperature can be set to the nearest degree between 40 and 100 °C and maintained throughout the pour. The timer is displayed on the same color screen, without needing a phone nearby. Guide mode provides starting points by method, altitude compensation recalibrates the setting to actual pressure, keep-warm can be set from 15 to 60 minutes, and Wi-Fi connectivity brings updates published by Fellow.
As for the white: it's the most neutral finish in the range. It dictates nothing to the rest of your kitchen.
