Coffee in El Salvador is mainly grown on volcanic lands between 1,200 and 1,800 meters above sea level. Areas such as Santa Ana, Apaneca-Ilamatepec or El Bálsamo offer ideal conditions: a temperate tropical climate, mineral-rich soils and good exposure. This combination allows for a slow maturation of the cherries, essential to develop complex aromatic profiles. El Salvador is particularly renowned for its Arabica coffee varieties, notably red Bourbon, historically very present in the country, and Pacas, a natural mutation of Bourbon discovered locally.
