Brewing initiation training: the art of filter coffee & soft methods (SCA certified)

Learn to unlock the aromatic complexity of coffee and master the art of slow coffee.

This SCA-certified Brewing skills initiation level course is the ideal entry point to explore the world of manual extraction methods. It allows you to understand the scientific principles governing filter coffee preparation and to master the iconic tools of specialty coffee.

The objective

Designed according to the educational standards of the Specialty Coffee Association's Coffee Skills Program, it enables you to acquire essential skills: understanding extraction, manual techniques, sensory analysis, water quality.

Led by Bruno, a certified trainer, this training alternates theoretical explanations and intensive practice to enable you to achieve professionally precise cups.

SCA Certification

This training follows the official Brewing Skills Foundation program of the Coffee Skills Program.

At the end of the training, you can take the exam to obtain the official SCA certification, internationally recognized in the specialty coffee industry.

A minimum of 4 participants is required. 6 participants max.

The program

Curriculum - Barista Initiation Module

Morning:

. Introduction of participants and trainer

. Theoretical part: coffee culture (origin, botany, cultivation, processing, harvesting…)

. Tasting and sensory analysis of different species, origins, varieties and roasting profiles

Lunch break (1 hour)

Afternoon:

. Theory on different filter extraction methods: definition and key extraction variables

. Practice: implementation of different extraction techniques, optimization of work time and adherence to hygiene standards

. Practical workshops: extractions focusing on essential variables (coffee freshness, grind size, water quality and temperature, coffee/water ratio, extraction time, etc.)

. Comparative sensory analysis of the results obtained

. Equipment maintenance

. Recap and exam preparation

The venue

Our Parisian Workshop

Our training room is equipped with professional espresso machines identical to those found in coffee shops. It also houses the first water bar dedicated to coffee in Paris and serves as a partner training center for Brita, a global leader in water filtration. This allows you to learn in real-world conditions, understanding all the parameters that influence the quality of a coffee.
