A short selection: books on the bean, on extraction and on aroma, kits for training your nose, and titles that carry the cup all the way to the grounds. What we keep here are the books we open ourselves between two services and use in our training courses.

Specialty coffee requires a specific vocabulary: where the bean comes from, how it was processed, what roasting reveals about it, and how extraction changes the flavor in the cup. The books gathered here cover these topics at various levels: Les Goûts du Café offers an introduction to sensory tasting, while STILL allows you to explore the coffee scene city by city.

Train your nose.

The coffee aroma kit is a collection of scents - vials to smell, name, and memorize. The 6-aroma version serves as an introduction, while the 2025 60-aroma edition is the standard tool for competition judges and sensory training courses, available in French, English, and Spanish. It is the same equipment we use during our coffee education workshops.
