Between the end of extraction and the first sip, freshly brewed coffee is not yet settled: it keeps degassing, oxidizes and reacts to its surroundings as it cools. The Acaia Horizon works on exactly this maturation phase, the few minutes before you taste.

Placed on top of the cup, it lowers the pressure inside and holds a stable low-pressure environment. According to Acaia, this process removes some of the gases such as oxygen and carbon dioxide while preserving the most delicate aromatic compounds. After this low-pressure rest, the majority of cups gain in smoothness, clarity and balance, with rounder acidity and more noticeable sweetness.
