Finca Zarza - Washed Anaerobic Pacamara
COFFEE PROFILE
Pacamara is a unique variety. Born from a cross between Pacas and Maragogype, it produces large beans and a full-bodied cup, renowned for its depth and aromatic layers. At Finca Zarza, this batch is processed using anaerobic washing: the coffee is first fermented away from oxygen in a sealed tank before being washed. This step enhances complexity while preserving the cleanliness and precision typical of washed coffees.
The result is an exploratory coffee, structured and lively, designed to be taken slowly to discover its nuances. It reveals different facets of this magnificent coffee when brewed using slow methods or as an espresso.
